Soda bread

Makes 1 x 500g loaf

Dry ingredients:

60g gluten free porridge oats

45g fine rice flour

40g brown rice flour

25g potato starch

25g tapioca starch

25g cornflour

10g buckwheat flour

8g psyllium husk powder

8g bicarbonate of soda

6g salt

5g xanthan gum

(Plus an extra handful of oats for shaping)

 

Wet ingredients:

260g buttermilk

20g oil (I use rapeseed but any would work, melted butter is delicious too)

10g black treacle

 

Method:

  1. Heat oven to 190C/170C fan/gas 5.
  2. Mix together all dry ingredients (not the extra oats for shaping).
  3. Add the wet ingredients and mix using fork or spatula for a minute until the whole thing comes together into a sticky dough.
  4. Allow to sit for 5 minutes.
  5. Tip onto a work surface dusted with the extra porridge oats (plus a little flour if necessary) and shape it into a ball. *You can also press into a 1lb loaf tin at this point and sprinkle with oats before baking*
  6. Put the ball on a lined baking tray and, using a sharp knife, make a deep cross on top.
  7. Put in the oven and bake for 35 mins.
  8. Cool on a wire rack until warm, then slice/tear apart and serve.
