Detroit style pizza base


Serves 2-3


235g gluten free wheat starch

30g cornflour

25g maize flour

25g buckwheat flour

15g millet flour

8g psyllium husk powder

2g xanthan gum

7g fast action yeast

8g salt


300g warm water

15g olive oil

10g honey


-combine all the dry ingredients.

-add the wet ingredients and mix on medium for 3-4 minutes until a thick batter is formed, scraping down mixing bowl to make sure fully combined. (Can be done by hand if you’re feeling strong 💪🏻)

-using a wet or oiled spatula, transfer to a well oiled non stick baking dish or pizza pan and spread/push out to the corners. You want it to be no more than 1cm thick! So use a large tray or make 2 pizzas.

-allow to rise for approx 45mins.

-par bake at 220/200 fan for 8 mins.

-top as you like and return to the oven for a further 10-12 mins.
